Chicken/Turkey Fettuccine Alfredo
I am not a chef. I don't know how (yet) to make alfredo sauce on the go. My ingredients are items I grew up with. I love genuine cheese sauces and order them whenever I can. Hope you like my recipe. Jackie
16 oz package of fettuccine noodles. I use organic whole grain noodles.
1 16-18 oz. jar of the cheesiest alfredo sauce I can find.
1/2 cup Velveeta cheese, cubed
1/2 cup Mexican style cream (I found it in the Mexican cheese section at my grocery store). Awesome stuff!
2-3 cups of cooked chicken or turkey - chunks or cubes
1/2 cup of chopped red bell pepper
1/2 cups of chopped green bell pepper
1/2 cup of chopped celery
1/2 cup of chopped onions
1 tsp garlic powder
1.5 tsp salt
1.5 tsp pepper
Cook the noodles al dente - I think about 9 minutes in boiling water. I toss the bell peppers and onions in the water to cook with the noodles.
Drain the noodles, peppers and onions in a collander and then toss everything back into the pot.
Add the alfredo sauce, Mexican cream, Velveeta cheese, spices and chicken to the noodles, peppers and onions. Toss until the Velveeta cheese is melted and mixed. Serve hot. I even eat it cold. This was really yummy. I impressed myself.

3. Boil the whole chicken. Save the chicken stock by
freezing or canning the liquid.
Economy: Though our birds cost more, they each make
several delicious meals.
1. Serve the baked chicken whole.
2. De-bone the leftover chicken. Freeze in portion sized
3. Use some for chicken salad rolled inside romaine
lettuce leaves. Use some for a chicken pizza. Use
some for pasta dishes or soups or quesadillas or pot
4. Use the chicken stock for soups. Some say it "cures
what ails ya". Great beginnings for chicken 'n
5. Try making turkey jerky.
Tomato/Chicken Alfredo Noodles
Prepare 8 oz. of alfredo noodles. Don't rinse. Set aside.
Saute 8 oz to 16 oz of chicken meat (from all parts of the bird) in unrefined olive oil and 2 tablespoons pasture butter.
Add 10-15 sliced cherry tomatoes to the chicken and continue to saute until the chicken is done.
Add the alfredo noodles to the chicken and tomatoes. Add 1-2 tablespoons of additional olive oil if necessary. Lightly sprinkle 1/4 tsp real salt. Serve with a green salad and some seasonal berries. Tasty!
